Common Ground Fair 2015

The weather was a bit overcast on Friday, for the first day of Common Ground Fair, and the rest of the weekend was bright sunny, another good year for the fair. People in Maine like traditions, and it was all as usual at the common ground fair, the farmers, the crafters, the kids, the vegetables and the animals.

Cool places in Maine: Tandem Bakery, Portland

This is definitely on my list for places to explore next time I am in Portland. – A bakery with supposedly excellent baked goods, and a very cool location in a former gas stations but with top notch interior design (industrial/modern being the key).

Strawberry cheese cake for 1 (or 2).

I was seriously inspired by the idea of single-serve cheese cakes. However, I had ideas of taking an European spin on it: first, I replaced the cream cheese and yogurt with Greek yogurt which makes it lighter, I added some vanilla, omitted the crust (honestly, just because I did not have any Graham crackers at home) and replaced it with strawberries. It is also baked in a toaster oven for 20 min. The results? It was gone in 20 seconds after these pictures were taken….

Single-serve Strawberry Cheesecake

  • 1 cup of 0% Fage Greek yogurt (or Chobani, or other Greek yogurt)
  • 1 egg
  • 1 TB sugar  (or 1 teaspoon sugar, a few drops of stevia syrup)
  • 1 teaspoon all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or frozen strawberries, halved

Preheat toaster oven to 325F. Mix the Greek yogurt, egg, sugar, flour, and vanilla extract, until well-combined (start with Greek yogurt and egg, mix them first, then add the others, and mix in each ingredient first).

In a tiny spring form, line the bottom with strawberries (spraying the pan is not necessary).

Pour the Greek yogurt mixture over it, and bake for 20 minutes.

Loosen the cake with a sharp knife from the pan wall, and cool for about 1h. Remove the spring part, and serve.
