It all came to my attention with the Allagash brewing company, which is large compared to many of the others. <span style="font-size: medium;">Vegan lentil ‘meat balls’ with marinara</span><br />
<b>Preparation of lentils:</b> <br />
<ul>
<li>1/2 cup beluga/French lentils (they are small and green/black)</li>
<li>1/4 cup red lentils</li>
<li>1/4 cup chickpeas</li>
<li>1 1/2 quarts water</li>
<li>1 fresh bay leaf</li>
<li>2 garlic cloves</li>
</ul>
Wash and rinse the lentils and chickpeas, and place in a pot with the water, the bay leaf and garlic. Bring to a boll, and simmer for about 1 1/2 hours on low (simmer only for 30 min if you soaked the lentils and chickpeas for 12h), or for 25 min in an Instant Pot. There is likely little water left, but if there is then drain it. It should make about 2 1/2 cups of cooked lentils.<br />
<br />
<b>Lentil walnut porcini meatballs:</b><br />
<ul>
<li>2 cups cooked beluga and red lentils and chickpeas</li>
<li>1 teaspoon olive oil</li>
<li>1/2 medium sweet onion, peeled and chopped</li>
<li>1 carrot, peeled and chopped</li>
<li>1 garlic clove, microplaned</li>
<li>1 tablespoon chopped fresh thyme (or dried)</li>
<li>1 teaspoons salt</li>
<li>2 TB tomato paste</li>
<li>1 TB red pepper spread I used Trader Joes red pepper eggplant spread) – if you don’t have any, use a pinch of paprika and 1 teaspoon agave nectar</li>
<li>1 oz dried shitake mushrooms, reconstituted in hot water, drained and chopped</li>
<li>1 oz dried porcini mushroom, reconstituted in hot water, drained and chopped</li>
<li>2 TB BBQ sauce</li>
<li>4 TB ground flax seed, 1/4 cup of water (mix to make 2 flax eggs)</li>
<li>1/2 cup panko breadcrumbs</li>
<li>1/4 cup bread crumbs</li>
<li>3 TB finely chopped walnuts</li>
</ul>
<ol>
<li>Preheat oven to 400 degrees. Prepare a large baking sheet with some olive oil so that the meatballs won’t stick. Set aside. </li>
<li>Prepare the flax eggs by combining the ground flax seeds with hot water, and set aside. The mix will gel.</li>
<li>Add the olive oil to a frying pan and sauté the onions, chopped carrots, minced garlic, thyme and reconstituted mushrooms over medium-high heat, stirring frequently, for about 5-7 min.</li>
<li>Add the tomato paste and red pepper paste and continue to cook for about 2 minutes, until all the ingredients are mixed well and the liquid is absorbed.</li>
<li>Transfer the mixture to a food processor, and let cool in the food processor for about 5 min.</li>
<li>Add about 75% of the cooked, and slightly cooled lentils/chickpeas to the vegetables in the food processor, and chop coarsely until all the ingredients are well combined. (It will be quite mushy, that makes the lentil balls even more sticky and hold together).</li>
<li>Add the mixture to a large mixing bowl.</li>
<li>Add the flax egg, regular bread crumbs, panko bread crumbs, chopped walnuts, BBQ sauce and the salt to the pureed mix as well as the non-pureed cooked lentil mix. Mix with a spatula until thoroughly incorporated.</li>
<li>Let sit for about 10 min (for the bread crumbs to soak up the liquid and bind the meatballs).</li>
<li>Use a small ice cream scoop and scoop out ping pong ball sized meatballs. Place the lentil balls in the prepared baking sheet, allowing 1/4 inch of space between the balls and in even rows vertically and horizontally to form a grid.</li>
<li>Bake the meatballs at 400F for 30 minutes, or until the meatballs are firm and cooked through. Allow the meatballs to cool for 5 minutes in the baking dish before serving.</li>
</ol>

Once they are browned, add carrots, celery and a bay leaf. Fill the instant pot to the max line with cold water, and set it to soup/stew, closed the lid and it is doing the rest of the magic on its own.<br />

<br /><b>Apple Marzipan Cake:</b><br />
I made several changes to the <a href="http://www.davidlebovitz.com/apfel-marzipan-kuchen-german-apple-almond-cake-recipe/" target="_blank">original recipe</a>, so I’ll write it up with my changes. I reduced the amount of marzipan, and it was still very sweet and ‘marzipan-y’'’. I also divided the batter into 2 spring cake pans, a 8 inch diameter and a 5 inch diameter spring pan, and omitted the apricot jam.<br />
<ul>
<li>4 medium apples, (1 3/4 pounds, 800g)</li>
<li>1 organic untreated lemon, zested and juiced</li>
<li>1 TB butter</li>
<li>1 TB sugar</li>
<li>100g almond paste</li>
<li>3/4 cup (150g) sugar</li>
<li>1/4 teaspoon salt</li>
<li>14 tablespoons (200g) unsalted butter, melted and cooled</li>
<li>1 teaspoon almond extract</li>
<li>4 large eggs, at room temperature</li>
<li>1 cup, 3 tablespoons (150g) flour</li>
<li>4 tablespoons cornstarch</li>
<li>2 teaspoons baking powder</li>
</ul>
1. Butter a 8 inch and a 5 inch springform pan (or a single 10 inch pan) .<br />
2. Peel and core the apples. Divide the lemon juice into two separate bowls. Slice two of the peeled and cored apples into 1/2-inch slices (3 slices per quartered apple), and toss the apple slices in one bowl of lemon juice. Dice the other two apples into 1/3-inch (1cm) cubes. Toss in the other bowl of lemon juice.<br />
3. On the stove top, heat a larger pan with 1TB butter, and 1 TB sugar, and once melted add in the diced apples and saute for 5 minutes. Let cool.<br />
4. Preheat the oven to 350ºF (180ºC).<br />
5. Using a grater with large holes, grate the almond paste into the bowl of a stand mixer fitted with the paddle attachment. Add the sugar and salt and mix until the almond paste is finely broken up.<br />
6. Add the melted butter, almond extract, and lemon zest, and continue mixing until smooth. Add the eggs one at a time, stopping the mixer and scraping down the sides of the bowl after each addition.<br />
7. Whisk together the flour, cornstarch and baking powder in a small bowl. Turn the standmixer to slow, and spoon in the dry ingredients into the almond batter mixture. Once done, stop the standmixer, and fold in the warm, diced apples by hand.<br />
8. Scrape the batter into the prepared pan and smooth the top. Place the sliced apples in concentric circles on top of the batter, pressing them in very lightly.<br />
9. Bake the cake until the top is golden brown and a toothpick inserted into the center comes out clean, about 1 hour for the large spring pan, and 45-50 min for the smaller one.<br />
9. Remove the cake from the oven. Let cool, and then run a knife around the inside of the cake pan to release the cake, and remove the sides of the cake pan. Serve with cognac whipped cream or vanilla icecream.<br />

On the way to Stonington, I stopped on Caterpillar Hill. It has the most breath-taking view of all of Maine.<br />

The beautiful landscape of the many small inhabited and uninhabited islands of Penobscot Bay, sitting next to each other, to they can be reached by sail boat or kajaks. Such beauty. <br />

On my way to Stonington, I stopped by the 44 North Cafe Deer Isle store and roastery, in the old Deer isle high school building. Unfortunately they were closed.<br />

This was an unusually long, hot and dry period for Maine, and for once I am relieved there is some rain. <br />
The other day I headed down the coast, for a day of art. Rockland with the Farnsworth Museum and the Wyeth Center are my favorite museums in Maine, mostly because of <a href="http://andrewwyeth.com/" target="_blank">Andrew Wyeth’s</a> paintings that capture the essence of Maine so timelessly. The day was rounded out with another piece of art: Sushi at <a href="http://www.suzukisushi.com/" target="_blank">Suzuki</a> in Rockland. <br />

The winding roads lead through a secluded, private world of lobster fisher families in a beautiful landscape. With Sunday afternoon there was a sleepy feeling in the air with empty streets, and people hidden in houses.<br />

Stonington is a small village with a short stretch of main street. In recent years, it has added a new coffee shop, <a href="http://44northcoffee.com/blogs/news" target="_blank">44 North Coffee</a>, and a handful of restaurants, <a href="http://www.aragostamaine.com/" target="_blank">Aragosta</a>.<br />

<b>1. Heat the oil</b> in a medium, heavy-bottom saucepan over medium heat. Add the onion and cook, stirring occasionally, or until it is soft. Add the garlic and cook over medium-low heat, stirring often, for 1 minute.<br />
<b>2. Add the chickpeas,</b> the broth and 2 cups water to the saucepan. Stir well to blend in the onion mixture and bring to a boil. Cover and cook over low heat for 1½ hours.<br />
<b>3</b>. <b>Add the lentils</b>, spices, salt, pepper and 2 cups water. Return to a boil. Cover and simmer over low heat until the chickpeas and lentils are tender, about 30 minutes.<br />
<b>4. Meanwhile,</b> mix the dill, and cilantro.<br />
<b>5. Add the dill and cilantro to the soup</b>. Cook over medium heat, uncovered, for 2-5 minutes.<br />
<b>6. Ladle the soup</b> into a bowls and garnish each serving with a fresh dill. Serve hot.<br />

<u>Cooking Quinoa</u><br />

<li>1/2 cup dry quinoa</li>
<li>1/2 medium onion, peeled and diced</li>
<li>1/2 TB olive oil</li>
<li>1 garlic clove, peeled, minced</li>
<li>1/2 cup of crisp white wine like pinot grigio</li>
<li>1 cup of vegetable broth or chicken broth</li>
</ul>
In a heavy bottom pot, heat the olive oil and saute the onion until translucent. Add the garlic and saute for 1-2 min (don’t burn it). Add the quinoa and stir around dry in the onion and garlic for a bit to toast it and give it an even more nutty flavor.<br />
Now, add the white wine and stir well, scrap off the brown parts from the bottom and less the wine mostly cook off. Then, add the broth, stir, and turn down the heat to medium-low. Cover with a lid, and cook for about 20 min, until the quinoa is fluffy.<br />
Take off stove and cool.<br />
<u>Salad</u><br />
<ul>
<li>cooled quinoa</li>
<li>3-4 radishes, sliced</li>
<li>1/3 of an English cucumber, peeled and cut into small cubes</li>
<li>1/2 apple, diced</li>
<li>optional: pomegranate seeds, celery</li>
<li>chopped mint, dill and cilantro</li>
<li>some sliced almonds or toasted walnuts</li>
</ul>

<b>For The Lemon Glaze:</b> <br />

<li>1 cup powdered sugar</li>
<li>juice of half lemon</li>
</ul>

<li>Preheat oven to 350 degrees. Butter and flour the bundt pan.</li>
<li>In a large mixer bowl, cream together the butter and sugar until light and fluffy. Add the ricotta cheese and blend well. Add the eggs one at a time, mixing well between each. Add the extracts and lemon zest and mix until fully combined.</li>
<li>Add the sliced almonds and gently mix in.</li>
<li>Sift together the flour, baking powder, and soda.</li>
<li>Add the dry ingredients in several smaller parts, mixing just until incorporated.</li>
<li>Pour the batter into the prepared pan and smooth the top with a spoon as needed.</li>
<li>Bake 40-45 minutes, or until the cake tester comes out clean.</li>
<li>Let cool in the pan for at least 15 minutes before turning out onto a wire rack.<br />Cool completely.</li>
<li>Whisk together the powdered sugar and lemon juice until smooth and thick.</li>
<li>Drizzle the lemon glaze over the top of the cake.</li>
<li>Let the glaze set for 30 minutes and then cut into wedges and serve.</li>

I poured the cake batter into a regular 10 cup bundt form (the amounts are for a 6 cup bundt cake pan), and it came out like a large ring with smaller slices, just right for the afternoon coffee.<br />

<li>2 bags of frozen spinach, thawed, not squeezed</li>
<li>1 tablespoon ginger, peeled and grated</li>
<li>1 Thai chile diced (optional)</li>
<li>1 tablespoon ghee</li>
<li>5 to 6 black peppercorns</li>
<li>1 cardamom pod</li>
<li>2 cloves </li>
<li>1/4 – 1/2 teaspoon ground turmeric</li>
<li>1/2 teaspoon fenugreek leaves</li>
<li>pinch of cinnamon </li>
<li>2 teaspoon garam masala</li>
<li>1 onion, chopped</li>
<li>2 medium garlic cloves, peeled and crushed</li>
<li>1 cup diced tomatoes, about 1-inch pieces </li>
<li>1/2 teaspoon agave syrup (or sugar)</li>
<li>3/4 to 1 teaspoons salt</li>
<li>1/4 cup ricotta (optional) </li>
</ul>
<ol>
<li>Put the thawed spinach, the ginger and the thai chili in a blender with 1 cup of water, and puree into a smooth puree. Set aside.</li>
<li>Roughly crush peppercorns, cardamom and cloves in a mortar and pestle and throw out the cardamom skin. If using a spice grinder, remove the cardamom skin and use only the seeds (save the cardamom skin for chai). Add the turmeric, fenugreek leaves, and cinnamon and stir.</li>
<li>Heat a thick-bottomed pan with the heat at medium. Add the spice powder and roast for 1/2 minute to make them fragrant. Add the ghee and wait until it is melted. Add the chopped onion, and garlic and saute for 3 minutes until translucent. Add the tomatoes and agave, and sauteed for 1-2 minutes.</li>
<li>Pour the spinach into the pan. Add salt and 1/2 cup water to adjust consistency. You can add a little bit more if you find the sauce is getting pasty.</li>
<li>Once the spinach mixture boils, reduce the heat, and let simmer for about 10 minutes.</li>
<li>Add garam masala. After 4 to 5 minutes, pour ricotta.</li>
<li>Eat with naan or over rice with a curry, or just as palak.</li>

The tricky question was: how to transfer the design on the linoleum block? I glued the leaves to a piece of paper, and with a tracing pencil traced the leaves’ outline. Then, turned the paper around and traced the outline again, so that some of the original tracing would rub off on the linoleum block.<br />

Turns out it is fairly easy to hand-stamp tea towels (this is a good <a href="https://jewelsathome.com/2014/12/20/diy-hand-stamped-tea-towels-teacher-holiday-gifts/" target="_blank">tutorial</a>, this <a href="http://crafts.tutsplus.com/tutorials/make-your-own-gorgeous-geo-hand-printed-tea-towels--craft-1957" target="_blank">one</a>, too). I bought some inexpensive flour sack towels on Amazon for $8 and a liquid (Liquitex Professional Fabric Medium) that I mixed with my acrylic colors to create fabric dyes.<br />
<br />
It worked best using an inexpensive foam roller that I soaked with paint and then rolled over the stamp. The towels dried for 48h, and then I ironed them to make the color permanent.<br />

I finally made it to <a href="http://www.nytimes.com/2012/08/12/travel/restaurant-report-long-grain-in-camden-me.html?_r=0" target="_blank">Long Grain</a> in Camden. The Thai beef salad completely wow-ed me. It was quite spicy but with vibrant flavors and the meat so buttery soft it must have been a really good steak.<br />

<b><span style="font-size: medium;">Banana muffins (GF)</span></b><br />
<ul>
<li>1/6 (40ml) cup olive oil</li>
<li>1/6 (40ml) maple syrup</li>
<li>1/2 TB vanilla extract</li>
<li>1/4 cup (30ml) plain Greek yogurt</li>
<li>1 large egg</li>
<li>1 ripe banana, smashed</li>
<li>1/2 cup quinoa flour</li>
<li>1/2 cup GF all-purpose flour</li>
<li>1 TB golden flax meal (I only had brown flax)</li>
<li>dash of sea salt</li>
<li>1/2 teaspoon baking powder</li>
<li>1/4 teaspoon baking soda</li>
</ul>
Preparation:<br />
<ol>
<li>Preheat oven to 350F. Prepare a baking sheet with silicon molds (they are typically too floppy if not placed on a baking sheet).</li>
<li>Mix the wet ingredients with a hand mixer in a bowl: olive oil, maple syrup, egg, Greek yogurt, vanilla extract and banana.</li>
<li>Mix the dry ingredients in a separate bowl: flours, flax seed, salt, baking soda and baking powder.</li>
<li>Mix both wet and dry ingredients until smooth.</li>
<li>Pour about 2 TB of dough into a small mold. The muffins will rise, and if you want ‘flat’ daisies, don’t overfill the pan.</li>
<li>Bake for 20-25 min, depending on the size of the molds (longer if you use a single pan). Cool and unmold.</li>
<li>Optional: dust with confectioner’s sugar.</li>
<li>Eat fresh, they taste best in the first 1-2 days.</li>

<li>1-2 fennel bulbs (greens cut off)</li>
<li>1 celery heart</li>
<li>1 Meyer lemon (organic)</li>
<li>pinch of salt</li>
<li>1 bunch of mint</li>
<li>1 TB olive oil</li>
<li>1 TB red wine or white wine vinegar (optional)</li>
</ul>
Necessary: mandoline or wide-mouthed food processor with a slicing inset.<br />
<ol>
<li>Finely slice the fennel, celery, and Meyer lemon into a bowl.</li>
<li>Chop the mint leaves (or add to the food processor)</li>
<li>Remove the vegetables, and gently mix by hand. Add a pinch of salt, and the olive oil.</li>
<li>Garnish with some mind and fennel prongs. Serve.</li>

2 1/3 cups all-purpose flour<br />3/4 cup Dutch-processed cocoa powder<br />1 teaspoon baking soda<br />3/4 teaspoon salt<br />1 1/4 cups (2 1/2 sticks) salted butter, softened to room temperature<br />1 cup sugar<br />1 cup firmly packed dark or light brown sugar<br />1 large egg<br />1 teaspoon vanilla<br />1 cup white chocolate chips<br />1 1/2 cups mini chocolate chips<br />
<ol>
<li>Preheat the oven to 350 degrees F.</li>
<li>In a medium bowl, combine the flour, cocoa powder, baking soda, and salt.</li>
<li>In the bowl of an stand electric mixer fitted with the paddle attachment cream the room temperature soft butter and the 2 types of sugar. Add the egg and vanilla and mix together.</li>
<li>Add the flour mixture and continue mixing until just combined.</li>
<li>Now, add the chocolate chips, and mix until combined.</li>
<li>Using a small ice cream scoop, drop the dough two inches apart on sheet pans lined with parchment (makes about 6 cookies per regular sized cookie sheet, and 3 cookie sheets overall plus 3 small cookies).</li>
<li>Bake for 15 minutes.</li>
<li>Cool the cookies on the cookie sheets (! don’t move them, they will fall apart!). The cookies should be very soft when they are removed from the oven. They will firm up as they cool (10 min).</li>

<li><span style="font-size: x-small;">Bring to a bubble, and then reduce the heat and cook for 2h on low heat. A third of the liquid should evaporate for a thick sauce.</span> </li>
<li><span style="font-size: x-small;">Add the dark agave nectar at the end. Stir and serve. </span></li>

Cabbage:<br />

<li>10 pounds of napa cabbage (adjust the recipe if you use less. I used 7 pounds).</li>
<li>1 cup of kosher salt</li>

Cut napa cabbage into bite-size pieces. Wash and soak the cabbage for a few minutes. Then salt the cabbage in a large bowl and let sit for 1.5 hours. Every 30 min gently mix and turn over the cabbage. After 1.5h, rinse the cabbage and drain.<br />

Porridge:<br />
<ul>
<li>3 cup of water</li>
<li>1/2 cup of white sweet rice flour</li>
<li>1/4 cup of white or coconut sugar</li>
</ul>
In a pot, hit the water with the rice flour and constantly stir. With in 3-5 min, the porridge will thicken up. Add the sugar, and stir some more for 1min. Take off heat. Let cool to room temperature.<br />

Ginger-garlic paste:<br />
<ul>
<li>1 cup of peeled garlic cloves</li>
<li>2 TB of fresh ginger</li>
<li>1 cup of fish sauce</li>
<li>1 medium sized white onion, peeled</li>

Place in food processor and process for 1 min.<br />

Porrigde-Chili paste:<br />

<li>Mix the cooled porridge with the ginger-garlic paste.</li>
<li>add 1-2 cups of chili flakes (just 1/2-1 cup if you don’t like it too hot)</li>
<li>mix it all up.</li>
<li>Add<ul>
<li>2 carrots, thinly sliced</li>
<li>1 cup of daikon, thinly sliced</li>
<li>1 bunch of scallions, sliced on an angle</li>
</ul>
</li>
<li>Mix the vegetables in the paste.</li>
</ul>

Make kimchi:<br />
<ul>
<li>Prepare a large storage container with a tight fitting lid. You will store the kimchi in the fridge to ferment for a few weeks.</li>
<li>Put on some rubber gloves.</li>
<li>In a bowl, mix a portion of salted, drained cabbage with a laddle full of chili paste. Mix up, and place in storage container.</li>
<li>Mix until all is mixed up and placed in storage container.</li>
<li>Place in fridge and wait for fermentation. It will start after 2 days, and smell slightly sour.</li>
