Bread salad

My secret favorite in a salad are… croutons, often only enjoy at salad bars. But today they became the main star of my home made deal. During winter, the best option for a salad is often to buy whole heads of romaine and chop them up. They stay freshest the longest. I added a half apple, some cubed cucumber and a slice of Ezekiel low-sodium sprouted bread, cubed and browned with some olive oil and vegan cheese. The ingredient that makes this salad special is a thinly sliced kumquat.
